The ripe grapes give characteristic notes of ripe, dried fruit, such as plums and grapes. The light maturation in oak barrels that follows gives the pleasant notes of chocolate and spices that make this a harmonious, balanced, pleasant and ripe wine.
Domain
La Calla produces "appassimento wines" from warm regions. The "Appassimento" method is an age-old technique in which the grapes are dried to obtain a higher sugar and alcohol content. This process concentrates the aromas and increases the complexity of the wine. Drying is done by cutting the branch with the grapes on the vine. The grapes are then pressed and fermentation begins. The skins are left in the must for a long time to extract the aromas. The wine then matures for several months in oak barrels.
